Taylor must be feeling them Southern roots lately or something. He’s got me making him some Pinto Bean Soup and cornbread. (Really just pintos and salt pork, but he swears it’s soup cuz it’s “soupy”).
So…. Having never made this stuff before I had to dig around online for an authentic recipe. It’s simple enough but I wasn’t about to try and “wing it” and screw it all up when the man has such a cravin’. Let’s all cross our fingers that it turns out how he wants it. :)
Country Pinto Beans
1 lb. dry pinto beans
1/4 lb. bacon or salt pork
1 medium onion chopped
2 t. salt
Wash the beans by putting them in a bowl with warm water. Stir them around and drain the water. Do this several times until the water is clear. Cover with water and soak overnight.
Put the beans in a pot and cover with water. Add the onions and the salt pork. Cover the pot and simmer for 2 1/2 to 3 hours. Stir occasionally and add water if necessary.
When the beans are tender, add the salt. Continue to cook until the liquid is creamy.
